Apple Cinnamon Oatmeal Cookies
Makes about 20 Cookies
Tools: Two baking sheets, parchment paper or silicon baking mat, two medium-sized bowls, hand mixer, whisk, piping/ziploc bag.
Ingredients:
Cookies
1 1/4 cups all-purpose flour
1 1/4 cups old fashioned oats
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 cup unsalted butter, room temperature
3/4 cup brown sugar, packed
1 large free-range egg
1 teaspoon vanilla extract
1 cup peeled apple, finely chopped into cubes (a tart apple like Granny Smith works well.. if you use a sweet kind of apple consider cutting the brown sugar down by a couple of tablespoons)
Glaze
1/4 cup powdered sugar, sifted to remove any lumps
2 teaspoons to 1 tablespoon milk of your choice
Preheat your oven to 350 degrees and line two baking sheets with parchment paper or silicone baking mats.
In a medium sized bowl, whisk together flour, oats, baking soda, salt, cinnamon and nutmeg and set aside.
In another medium sized bowl, cream together the butter and the brown sugar until light and fluffy. Add in the egg and vanilla and mix until combined.
Add the whisked flour mixture to the butter mixture and mix until the dough comes together. Add the apples and mix gently by hand until everything is well combined.
Drop the mixture in 2 tablespoon increments onto your baking sheet, placing two inches apart. It’s a good idea to pat them down slightly with wet hands before baking. Bake the cookies in your preheated oven until they are set - about 12-15 minutes.
Allow the cookies to cool slightly on the baking sheets before moving to a wire rack to cool completely.
While the cookies are cooling, prepare the glaze. Combine the icing sugar and milk until smooth. Adjust from the 2 teaspoons of milk to your preferred consistency if needed. Transfer the glaze to a piping bag or ziploc bag for glazing.
Wait until the cookies have cooled completely before glazing. Allow the glaze to dry for around 15 minutes before transferring the cookies to an airtight container.
