Browned Butter & Sea Salt Rice Krispie Squares

Makes one 9x13 tray of Squares


Tools: 1 9x13 baking dish, large flat-bottomed saucepan, whisk, spatula.

Ingredients:

  • 1/2 cup high quality unsalted butter (I like to use grass-fed butter here), plus extra for greasing pan

  • 1 package (about 40 large) Jet-Puffed marshmallows

  • 6 cups Rice Krispies cereal

  • Flaky sea salt, for sprinkling

  1. Grease your 9x13 pan with butter and set aside.

  2. Heat butter in a flat bottomed saucepan (you will want one large enough to fit the marshmallows in as well) over medium-low heat, whisking occasionally. It will melt, start to foam then turn a clear golden colour (whisk more frequently at this time) and then begin to brown and smell nutty.

  3. Remove from the heat and add the marshmallows, stirring to combine. There should be enough residual heat to melt the marshmallows but you can put back on low heat if they aren’t smooth.

  4. Add in the cereal and stir to combine. Press into your prepared pan immediately (putting a little butter on your hands can stop the mixture from sticking and allow you to press it fully into the pan) and sprinkle with flaky sea salt.

  5. Allow the squares to cool before cutting.
